Some days are made for biscuits. Here’s the batch that warmed our hearts and tummies this week.
Buttermilk Mitten Biscuits
1 c white flour
3/4c whole wheat flour
1/4c quick oats
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
dash cayenne pepper and paprika
3 Tb butter or margarine
1 c buttermilk (or 3/4c milk + 1 TB vinegar + 1/4 c yogourt, or just 1c milk + 1 TB vinegar)
Mix dry ingredients. Use fork to cut in the butter until the mix is crumbly. Add the milk and mix til moistened.
Knead on a floured surface a few times and then roll out about 3/4″ thick. Cut into squares or use cookie cutters to make about 12 biscuits.
Bake at 425 for 11-13 min.
